Recipe * Sweet Potato and Black Bean Enchiladas

Permutations of the ever inventive sweet potato and black bean combo are found in just about every cookbook I own and for good reason - it tastes really good! That said, this enchilada recipe is a real standout. Its super good comfort food, its pretty easy to make, and its loaded with all those fab sweet potato nutrients. I use Follow Your Heart Mozzarella and Hatch enchilada sauce to round things out. Variety is good too...I've added chard, used tofu instead of beans, and switched out the sweet potato for yam. Wondering what the difference between a yam and sweet potato might be? This has been a raging debate in my family for years, as if there aren't better things to argue about :)

I've never seen a yam in "person." I did see a taste test on Food Network last night with a wrinkly, white yam vs. sweet, golden sweet potato taste test. Everyone who tasted said the yam was chalky or tasteless and the sweet potato was the winner.
Forgot to mention how much I love this combination! I just made this a couple of weeks ago only I used butternut squash. And my son makes a wonderful sweet potato and black bean chili.
yeah, i still don't think i really know the difference - and it truly has been hot topic in my family on occassion, when we get bored and having nothing else to argue about:)

Wow... I have oddly remained unaware of the sweet potato - black bean love affair. I'll have to investigate. These enchiladas look super tasty!

I read that we only have sweet potatoes in the U.S., regardless of what they are called. The only real yams are in Africa (I want to try one!).

love sweet potatoes and yams. I also can never get my yams straight, I always use 'yam' synonymously with 'taro', probably because I usually use it in Asian dishes (mmmh, taro desserts...)
I agree with the loveliness of the sweet potato-black bean combo. I've only recently discovered the goodness of black beans, so now I'm trying them in pretty much everything... ^_^
